Passion Fruit Curd recipe
Ingredients:
6 large egg yolks.
½ cup of sugar.
½ cup of frozen passion fruit juice drink concentrate, thawed.
Pinch of salt.
1 lemon rind, grated.
2 tablespoons of lemon juice, fresh squeezed.
4 tablespoons of unsalted butter.
Directions:
In the top of a double boiler, whisk the egg yolks, sugar, thawed juice, salt, lemon rind and lemon juice.
Cook over boiling water, stirring constantly, for about 9 minutes or until the mixture thickens and clings to the back of a spoon.
Remove from heat.
Allow to cool for about 3 minutes, stirring several times.
Stir in the unsalted butter, one tablespoon at a time.
Cover the mixture and refrigerate until needed (up to one week).
